莧菜的營養分析
莧菜，又名米莧、赤莧、彩莧、青香莧、雁來紅等， 系莧科莧屬一年生植物莧之莖葉。莧菜按其顏色分紅莧、綠莧和紅綠雜色三種。在我國南北各地均有栽培，是夏季的主要蔬菜之一。莧菜葉多質嫩，莖細柔軟，清爽可口，易於消化吸收。莧菜所含的鐵質、鈣質、蛋白質均非常豐富，俗語有說：“六月莧，當雞蛋，七月莧，金不換。”由此可見其營養價值之高。每100克莧菜含蛋白質2.5克，脂肪0.4克，碳水化合物5克，鈣200毫克，磷46毫克，鐵4.8毫克，胡蘿蔔素1.92克，尼克酸1.3克，抗壞血酸（維生素C）35毫克。此外，莧菜還含有維生素B1、B2等。

莜麥麵的營養分析
莜面的營養價值很高，富含蛋白質（15％）和脂肪（8.5％），且蛋白質中主要氨基酸含量多而全面。莜麥中還含有其他禾穀類作物中缺乏的皂苷，能有效降低膽固醇。但粗加工的莜面製品除了氣味大外，也有不容易消化的缺點。老鄉常說，莜面不能吃得太飽，“莜面吃個半飽飽，喝碗滾水正好好”。也正因為莜面不易消化，所以吃了耐飢，不會餓。在當地，莜面是一種很受歡迎的食品。

藕粉的食療價值
藕粉的基本成分是澱粉。澱粉是由許多葡萄糖分子縮合而成的多醣體，不溶於冷水中，但加入沸水沖調，澱粉便會膨脹，變成具有粘性的半透明膠糊狀體，表現為稠厚，發生“糊化”現象。由於藕粉的可塑性差，在點心製作時很難直接包餡成形，所以“藕粉圓子”製作時改變常規先制皮後包餡的方法，採用滾沾法，在具有遇沸水短時間不會溶化特性的餡心上多次滾裹幹藕粉，每裹一次，放入沸水中燙一次，使藕粉糊化定型，再滾沾幹藕粉，如此反复4—5次而成圓子；與其它粉料（粳米粉、糯米粉等）摻合可以製成點心的坯皮，製作花色餃及船點。
[成分與養生] 藕粉的基本成分是澱粉，食後在胃腸中容易轉化為葡萄糖等而被人體吸收。適宜於熱性病患者、腸胃機能障礙患者，產婦、兒童以及老人服用，是一種食用方便、味清氣芳、易於消化的理想滋補食品。
主要化學成分是：碳水化合物82.6--87.5％，蛋白質0.8--1.0％，脂肪0.2--0.5％，及鈣、磷、鐵、維生素和鞣質。每公斤藕粉含熱量3350 --3580大卡。
中醫認為藕粉性甘、咸、平，具有益血、止血、調中、開胃、治虛損失血的功效。產後及吐血者宜食之，凡一切證，皆可不忌。

米魚的介紹
米魚又稱為 鳘魚、敏子、敏魚、鮸魚、毛常魚、米古、命魚。
形態特徵：
體側扁，略延長。口腔內為鮮黃色；上頜外齒為犬齒狀，尤以前端2枚最大。體背部為銀灰褐色，腹部灰白。背鰭灰黑，軟條的基部具數列小圓鱗，佔軟條高度的1/3。尾柄細長，尾鰭楔形。
米魚，一作鮸魚（音miǎn），形似鱸魚，但肉質略粗糙，體色發暗，灰褐並帶有紫綠色，腹部灰白。背鰭鰭棘上緣黑色，鰭條部中央有一縱行黑色條紋。胸鰭腋部上方有一晴斑。其餘各鰭灰黑色。米魚體形為兩側扁平向後延長狀，背、腹部淺弧形。
喜棲息於混濁度較高的水域。能以魚鰾發聲，性兇猛。白天下沉，夜間上浮；每年4～5月由深水區游向近岸作生殖洄游。肉食性，以小魚及小型底棲無脊椎動物為主。
米魚的成體一般通常體長50厘米，重2千克左右，大者可達80厘米，體重可達5千克，體長為體高的3.4—4.2倍，為頭長3.4—3.7倍。米魚的頭中等大小，略側扁，較尖突，長著圓鱗。頭長為吻長4.1—5.2倍，為眼徑5—5.4倍。
米魚的眼睛較大，位於頭前半部上側，眼圈大，眼徑略小於吻長，眼膜透明度高，紅而明亮，眼間隔等於或大於眼徑。米魚長有2個稍圓的凸鼻孔，前鼻孔小，圓形；後鼻孔大，長形，緊挨著眼睛。
米魚的口大而微斜，上下頜約等長，口閉時上頜微突。上頜骨後延，伸達眼之後緣下方。米魚的吻短而鈍尖，吻褶邊緣游離成吻葉狀，吻上中央具一小孔，上行數孔不顯著。米魚的上頜外行牙較大，呈犬牙狀，口閉時大部外露；內行牙細小，呈牙帶：下頜內行牙擴大，也呈犬牙狀，外行牙小，有帶狀牙群。米魚的唇較厚，口腔灰白色。舌發達，游離，有4個頰孔，前方2孔細小，後方2孔呈裂縫狀。中央的領孔及內側的顛孔呈四方形排列，沒有頜須。
米魚除吻部及鰓蓋骨被小圓鱗，頰部及上下頜無鱗外，全身都長有櫛鱗，鱗片細小，表層粗糙，各鰭基部長有小圓鱗，背鰭鰭條部及臀鰭的二分之一長有小圓鱗。尾部小鱗伸達尾鰭的中部。
米魚的鰓孔很大，鰓蓋膜與峽部不連接。前鰓蓋骨邊緣有細鋸齒，鰓蓋骨後上緣有一個扁棘。有7條鰓蓋條，還長有假鰓，鰓耙細長。
米魚的體腔中等大小，腹膜灰黑色。腸粗短，在腹腔中盤繞兩次。胃呈長囊狀。有5個長而大的幽門盲囊。魚鰾很大，呈圓錐形，前端不突出，呈短囊狀，後端尖細，魚鰾側長有34對側肢，每一側肢具背分枝及腹分枝，背分枝和腹分枝又分出細密小枝，交叉成網狀。脊椎骨有24—25塊。
米魚的兩個背鰭連在一起，起點在胸鰭基部上方，較腹鰭的起點稍稍靠後，鰭棘部和鰭條部有一個較深的缺刻，背鰭前部的鰭棘上緣為黑色，後部鰭條的中央有一條縱行黑色條紋；胸鰭尖長，比腹鰭長，基部黃色，邊緣黑色，胸鰭腋部上方還有一個暗斑；臀鰭長有2條棘；尾鰭呈楔形，基部為黃色，邊緣顏色稍淺。米魚長有9—10條鰭棘和28—30鰭條，第一鰭棘短小，第三鰭棘最長，約為眼徑1.7—2倍。臀鰭起點在第13—14背鰭鰭條的下方，長有2條鰭棘和7條鰭條；臀鰭的第二棘細長，約為眼徑1—1.3倍。

黃蜆子的營養及食法
黄蚬子学名青柳蛤，产于黄海浅海处，外壳呈黄色，其肉也呈黄色，斧型的贝壳，暗黄色的斑纹。蚬肉中含有蛋白质、多种维生素和钙、磷、铁、硒等人体所需的营养物质；还含有微量的钴对维持人体造血功能和恢复肝能有较好效果，营养价值颇高。由于丹东东港附近的海域养分充足，因此这里盛产的黄蚬子比其它地方的个头更大肉更肥，味道更鲜美，营养更丰富。
黃蜆子在烹飪中適宜於熗拌，白煮，清炒等多種方法。
最好的吃法還是炭火燒烤為妙。將加工好的無沙黃蜆放於炭火之上。紅彤彤的炭火，黃燦燦的蜆殼，熱騰騰的水汽，讓人垂涎欲滴，片刻，當黃蜆子被烤張了殼就要從炭火上小心地取出，用筷子搛起熱乎乎的蜆肉往嘴裡一放，飽滿的肉汁鮮得過癮，比吃了燕窩魚翅還滿足。黃蜆子最鮮美的並非是肉，而是體內的汁水，古人認為這才是食之精液。令人回味無窮，真是人間的美食。尤其是好友聚會，三五知己，品嚐美酒，談天說地，不能少得的世間美食。丹東東港一些人甚至乾脆將活生生的黃蜆子掰開，將肥厚的肉身不由分說地放進嘴裡。
清代郭麟曾在《桂枝香·黃蜆》中以“俊味江鄉堪數”來稱道它的美味。東港人對黃蜆子的喜愛比之有過之而無不及。

香菇的營養價值
香菇（冬菇）又名椎茸，是生長在大自然環境下的山活中珍貴的一種副食品。野珍品，其具有一種獨特自然風味。是含有多種價值較高的一種食用菌，也是生香菇可以用來燉、炒、煮等各種做法，其口味鮮美，口感細嫩，是歷來人們為席上佳餚。
烤製與貯藏
在香菇栽培過程中，由於管理不及時，或者氣候異常、溫差大，易形成一些畸形菇和劣質菇(統稱菜菇)。這些劣質香菇如果不做處理，直接作為鮮菇進入市場售價很低，而且銷路不好。如果將其烤製成乾菇，不但可以升值，而且銷路也好。但一些農戶由於烤製方法不當，同樣的干菇，價格往往相差好幾倍。
1、進行原料處理。將鮮菇剪柄。剪柄長短應根據菇形、菇肉、菇質、菇面來確定，並可分為去糠、剪半腳、剪平腳三個等級。一般而言，菇面小、菇肉薄、菇腳長的香菇，以去糠為宜(保持全腳);菇面大而圓、菇肉薄、菇質鬆軟的菇，可取其半腳(即剪去菇腳的一半)，取值範圍為1～1、5厘米左右;菇面大而圓，菇肉厚而堅硬的，以取平腳為宜，即剪去腳，剩下0、5厘米左右。根據菇面大小、菇肉厚薄，菇面圓度、菇質好壞，分長短剪留菇腳，對成品菇幹的價格和菇幹的所得率影響很大。
2、烤製方法：關鍵是掌握好烤製過程的溫度。香菇按不同長度進行剪柄後，排放於烘篩上，將烘篩推入烘乾機烘箱內，緊閉箱門開始點火起烘。脫水初期溫度不能低於30℃，最好是32℃起烘;在40℃～50℃的範圍內烘6小時;停火1小時後，再在45℃～50℃熱風溫度條件下，脫水6小時;停火2小時，進行檢菇。最後在50℃～60℃下脫水直到烘乾為止。在烘製時不宜升溫太快，每小時升溫不能超過3℃～5℃。驟然升溫會引起菇體急劇收縮，造成菇蓋向外倒捲並變黑，嚴重影響菇乾品質。在烘製過程中，檢菇也是不可忽視的環節。因為菇肉厚薄不一，其含水量差別很大，對烤製時間要求自然不一。所以在第二次停火後，就必須逐篩進行檢查，發現已烘乾的應先撿起放入塑料袋內，未乾的推入箱內繼續再烘。這樣可防止部分香菇因烤製過度而變焦，影響乾菇的品質。
3、乾菇的貯藏：香菇烘乾後，如果不妥善貯藏，很容易反潮。特別是在雨季氣溫高、濕度大時更易引起霉變及蟲蛀。所以香菇烤乾後，要迅速分等級裝入塑料袋中。為了防止潮氣侵入，可在塑料袋中放入一小包無機氯化鈉，以免菇體內的糖分滲出而變色，同時防止麥蛾等產卵和孵化。為了防止香菇蛾等蟲害，也可在貯藏前用二硫化碳將貯藏室熏蒸24小時，等排除餘氣後再行貯藏。
乾燥貯存：
香菇吸水性強，含水量高時容易氧化變質，也會發生霉變。因此，香菇必須乾燥後才能進行貯存。貯存容器內必須放入適量的塊狀石灰或乾木炭等吸濕劑，以防反潮。
低溫貯存：
香菇必須在低溫通風處貯存，有條件的可把裝香菇的容器密封後置於冰箱或冷庫中貯存。
避光貯存：
光線中的紅外線會使香菇升溫，紫外線會引發光化作用，從而加速香菇變質。因此，必須避免在強光下貯存香菇，同時也要避免用透光材料包裝。
密封貯存：
氧化反應是香菇質變的必經過程，如果切斷供氧則可抑制其氧化變質。可用鐵罐、陶瓷缸等可密封的容器裝貯香菇，容器應內襯食品袋。要盡量少開容器口，封口時要排出襯袋內的空氣，有條件的可用抽氧充氮袋裝貯。
單獨貯存：
香菇具有極強的吸附性，必須單獨貯存，即裝貯香菇的容器不得混裝其他物品，貯存香菇的庫房不宜混貯其他物資。另外，不得用有氣味揮發的容器或吸附有異味的容器裝貯香菇。
營養價值
香菇素有"山珍"之稱，宋朝就有將其列為貢品的文獻記載，也是我國民間筵席上不可缺少的"素中之葷"的名菜。日本人稱香菇為"植物性食品的頂峰"，羅馬人將其列為"上帝食品"。香菇營養豐富，對人體健康十分有益。據食品專家分析，每100克的干香菇中，含蛋白質13克，脂肪1、8克，碳水化合物54克，粗纖維7、8克，灰分4、9克，鈣124毫克，磷415毫克，鐵25、3毫克，以及維生素B1、B2、C等。此外還含有較多的麥角甾醇及甘露醇等，經日光或紫外線照射，均可轉變成維生素D2，可增強人體免疫能力，並能幫助兒童骨骼和牙齒的生長。據報導香菇中有30多種酶，是糾正人體酶缺乏的獨特食品。

2、烤製方法：關鍵是掌握好烤製過程的溫度。香菇按不同長度進行剪柄後，排放於烘篩上，將烘篩推入烘乾機烘箱內，緊閉箱門開始點火起烘。脫水初期溫度不能低於30℃，最好是32℃起烘;在40℃～50℃的範圍內烘6小時;停火1小時後，再在45℃～50℃熱風溫度條件下，脫水6小時;停火2小時，進行檢菇。最後在50℃～60℃下脫水直到烘乾為止。在烘製時不宜升溫太快，每小時升溫不能超過3℃～5℃。驟然升溫會引起菇體急劇收縮，造成菇蓋向外倒捲並變黑，嚴重影響菇乾品質。在烘製過程中，檢菇也是不可忽視的環節。因為菇肉厚薄不一，其含水量差別很大，對烤製時間要求自然不一。所以在第二次停火後，就必須逐篩進行檢查，發現已烘乾的應先撿起放入塑料袋內，未乾的推入箱內繼續再烘。這樣可防止部分香菇因烤製過度而變焦，影響乾菇的品質。
3、乾菇的貯藏：香菇烘乾後，如果不妥善貯藏，很容易反潮。特別是在雨季氣溫高、濕度大時更易引起霉變及蟲蛀。所以香菇烤乾後，要迅速分等級裝入塑料袋中。為了防止潮氣侵入，可在塑料袋中放入一小包無機氯化鈉，以免菇體內的糖分滲出而變色，同時防止麥蛾等產卵和孵化。為了防止香菇蛾等蟲害，也可在貯藏前用二硫化碳將貯藏室熏蒸24小時，等排除餘氣後再行貯藏。
乾燥貯存：
香菇吸水性強，含水量高時容易氧化變質，也會發生霉變。因此，香菇必須乾燥後才能進行貯存。貯存容器內必須放入適量的塊狀石灰或乾木炭等吸濕劑，以防反潮。
低溫貯存：
香菇必須在低溫通風處貯存，有條件的可把裝香菇的容器密封後置於冰箱或冷庫中貯存。
避光貯存：
光線中的紅外線會使香菇升溫，紫外線會引發光化作用，從而加速香菇變質。因此，必須避免在強光下貯存香菇，同時也要避免用透光材料包裝。
密封貯存：
氧化反應是香菇質變的必經過程，如果切斷供氧則可抑制其氧化變質。可用鐵罐、陶瓷缸等可密封的容器裝貯香菇，容器應內襯食品袋。要盡量少開容器口，封口時要排出襯袋內的空氣，有條件的可用抽氧充氮袋裝貯。
單獨貯存：
香菇具有極強的吸附性，必須單獨貯存，即裝貯香菇的容器不得混裝其他物品，貯存香菇的庫房不宜混貯其他物資。另外，不得用有氣味揮發的容器或吸附有異味的容器裝貯香菇。
營養價值
香菇素有"山珍"之稱，宋朝就有將其列為貢品的文獻記載，也是我國民間筵席上不可缺少的"素中之葷"的名菜。日本人稱香菇為"植物性食品的頂峰"，羅馬人將其列為"上帝食品"。香菇營養豐富，對人體健康十分有益。據食品專家分析，每100克的干香菇中，含蛋白質13克，脂肪1、8克，碳水化合物54克，粗纖維7、8克，灰分4、9克，鈣124毫克，磷415毫克，鐵25、3毫克，以及維生素B1、B2、C等。此外還含有較多的麥角甾醇及甘露醇等，經日光或紫外線照射，均可轉變成維生素D2，可增強人體免疫能力，並能幫助兒童骨骼和牙齒的生長。據報導香菇中有30多種酶，是糾正人體酶缺乏的獨特食品。

山核桃貝果
山核桃貝果
要說，最近我們家庭烘焙界刮什麼風，估計大家都知道，貝果嘛，這陣風從哪裡刮起來的，想必不用我說也都知道了！我很少跟風的，這次也忍不住跟一下了！
貝果是我家從上到下都喜歡吃的麵包包，以前就總做，簡單又好吃，還符合全家人的口味，呵呵！我們家最喜歡的吃法，就是從中間劈開兩半，然後放點兒生菜，放個煎雞蛋，放上一片火腿，最後放上一片安佳奶酪，哇塞，一頓豐盛的早餐就齊活了！
北京的這天兒，也不見回暖所以得多吃點兒，增加抵抗力！
核桃貝果：6個量
原料：
高粉（大磨坊）300g、幹酵母（紅裝燕子）1小匙、鹽1小匙、三溫糖1大匙、水200ml、焯貝果用白砂糖1大匙、山核桃50g。
做法：
1、所有材料充分混合揉勻，開始一次發酵（70分鐘）戶外組合屋 ；
2、分割，滾圓，鬆弛15分鐘；
3、取出一個麵團，封口朝上，擀成橢圓形；
4、將上面向中間折疊，再將下面向中間折疊；
5、最後對折，上下捏緊，搓長負離子直髮 ；
6、將一頭擀扁，包住另外一頭，整成圓環形，放在烤盤上開始二次發酵（25分鐘）；
7、將寬口鍋中，放入砂糖，燒開，轉小火，放入二次發酵好的麵團；
8、兩面各15秒，然後直接放入到已經預熱到200度的烤箱中；
9、中層，16分鐘。

全麥葡萄吐司
原料：
（此配方不加葡萄乾即全麥吐司，可用450克吐司模做1條吐司，我用迷你吐司模做了4個不帶蓋的，用乾能金條模做了2個平頂的）：中種：金像麵包粉175克、水105克、即髮乾酵母2.5克。
主麵團：
全麥粉75克、紅糖15克、奶粉10克、鹽5克、水70克、黃油10克、葡萄乾50克壽司（泡水後瀝乾）。
不帶蓋吐司表面裝飾：
蛋液、雜糧粒適量。
做法：
1、中種麵團所有原料放在一起，揉成團後（圖1），放溫暖處發至4-5倍左右大（圖2）；
以前我一般控制中種發至2.5倍左右大，現在看來發到這個程度是遠遠不夠的，需要發到4-5倍大，本來乾硬的麵團變得很軟，沒什麼彈性，拉時很容易斷裂。我家現在二十多度，發到這個程度用了四個多小時，中種法其實是比較費時間的；
2、將主麵團原料中除黃油、葡萄乾以外的所有原料與發好的中種放在一起揉至擴展後，加入黃油揉至可拉出比較堅實的薄膜（圖3）。我打的程度在擴展和完全之間；
理論上講，中種應與主麵團裡的糖、鹽、半量的水放在一起攪勻後，再加入麵粉、奶粉和剩餘的水和成麵團，我的投料量比較小，中種和一部分水放進缸里後剛碰到鉤子，根本攪拌不起來，所以還是跟以前一樣，中種切小塊後跟其它原料一起放進去；
3、加入瀝乾水分的葡萄乾（圖4）揉勻後（圖5），鬆弛30分鐘；
4、鬆弛後的麵團（圖6）取出排氣後，分割成40克/個，滾圓後鬆弛15分鐘（圖7）；
5、鬆弛後的麵團擀成橢圓形，翻面後左右向內折（圖8），然後壓薄底邊，捲成卷，放入吐司模裡，在溫暖濕潤處進行最後發酵（圖9 ）；
6、無蓋的吐司發至滿模（圖10），表面刷蛋液，灑裝飾雜糧粒，平頂吐司發至8分滿，入預熱180℃的烤箱，下層，上下火，25分鐘；
平頂吐司發至8分滿（圖11），入預熱180℃的烤箱，下層，上下火，35分鐘（圖12）。
7、烤焙結束立即出爐，脫模，放晾架上晾涼。
今天這篇博文要對以前我對“中種法”的認識做下修正和補充，之前我對中種麵團的發酵程度了解不夠，經過這段時間的學習和實驗，總算弄得比較清楚了，這篇文章與之前的《焦糖杏仁辮子包》合在一起就是比較完整的對中種法的認識了。
這次用的全麥粉，是美國的一個焙友知道我想嘗試百分之百全麥麵包找不到合適的全麥粉後，讓她LG萬里迢迢背給我的；我用的風車麵包粉，是大連的焙友托船員帶給我的。能跟這麼多朋友一起做著自己很喜歡的事情真是非常幸福。
現在我每天都會收到很多紙條、留言和郵件，不都是問問題的，有好多是跟我交流她們烘焙生活中的趣事，家人的感受等，把我當朋友才會這樣，讓我感覺非常溫暖。我沒有機會專業學習烘焙，自己邊學邊做邊思考做到了今天，感謝焙友們的信任、支持和包容，無論我做得什麼樣都給我鼓勵。

韓式大醬湯
特別喜歡素湯，無論清淡還是味濃。大醬湯裡，沒有油，沒有肉，卻是格外的有味道。
普通的食材做得濃郁，韓醬功不可沒。溶入湯裡，化掉，消失無形，不動聲色地渲染了湯色，滋潤了食材。了無痕蹟的動人處，最是一番好滋味。大醬湯泡米飯，吃得很火熱，極過癮。
材料：
乾海帶結10克、土豆1個、豆腐1小塊、白蘑菇2個、西葫蘆半個、紅椒1根、豆芽30克。
調料：
淘米水（米洗淨後，再放水，用手搓米，直至水變白）、蔥1根、蒜若干瓣、韓式甜辣醬、韓式大醬、辣椒粉。
做法：
1、土豆、豆腐切塊，蘑菇、西葫蘆、紅椒切片，蔥切段，蒜切碎，海帶結泡發。
2、淘米水倒入鍋中，放入大醬和甜辣醬，攪拌勻。
3、將海帶結放入，煮10分鐘。
4、依次放入土豆、蘑菇、豆腐，煮幾分鐘。
5、再放入豆芽、西葫蘆、紅椒。
6、放入蔥段、蒜碎，調入辣椒粉，攪拌勻，關火。

做法：

鱸魚蒸水蛋
原料：
小號鱸魚一條、雞蛋。
調料：
雞油、鹽、蔥、姜、蒸魚醬油、白糖。
做法：
1、洗淨鱸魚，在魚脊骨橫切一刀，灑1/2湯匙鹽抹遍魚身醃一下。洗淨蔥薑和香菜，蔥和香菜切成段，姜切成絲。
2、在鱸魚的魚腹內塞入少許薑絲，魚身上放些雞油，加保鮮膜放入微波爐中高大火蒸6分鐘。
3、將2隻雞蛋打入碗裡，溫水倒入碗裡，用筷子順一個方向攪打一會兒
4、取出鱸魚倒掉碟中湯汁，放回鍋內，將打好的蛋液倒入碟裡，加蓋再入微波爐加熱中火5分鐘
5、熱鍋添入3湯匙油，爆香薑絲，放入蔥段，倒入4湯匙蒸魚醬油、1/4湯匙白糖還有剛才濞出來的湯汁，拌勻，澆在魚身上然後撒上香菜末。即可，就著烙餅吃就更棒了。

核桃中丰富的蛋白质极易被人体吸收，特别是多种氨基酸对大脑组织、神经的营养极为有益；核桃中的磷、锌、锰等还是脑垂体的重要营养成分。可以说核桃是其大脑发育的天然营养库。
核桃的脂肪含量很高，但百分之七十一是亚油酸、百分之十二是亚麻酸，亚油酸是必需脂肪酸，它能抑制人体对胆固醇的吸收、促进胆固醇的分解从而降低血液中胆固醇的浓度，防治心脑血管疾病；亚麻酸能提高婴幼儿的大脑发育和脑神经功能，增强视力、促进机体和形体发育。

3、鍋中放清水燒開，加紅糖小火熬到粘稠狀。
4、加入蜂蜜後立即倒入核桃仁快速翻炒。
5、核桃仁掛滿糖汁後立即關火，灑入熟芝麻拌勻。
6、將核桃仁取出攤開、晾涼即可。
备注：
1、生核桃仁过沸水可以去除涩味。
2、核桃仁制熟的工艺选择烤制而非油炸会更有利于健康。
3、熬制糖汁时要选择小火，防止熬糊。
4、蜂蜜要在糖汁浓稠后放入，快速拌匀即可倒入核桃仁。蜂蜜不可与红糖一起下锅，过度的高温会破坏蜂蜜中的营养物质。
5、倒入核桃仁后可转为微火保温即可。快速翻拌使得核桃仁挂满糖汁即可。

最美的自然風光
